Ingredients
  

  • cup brown sugar
  • ½ cup oil
  • ¾ cup sour cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1 cup cornmeal
  • cup fresh lemon juice
  • 1 Tbsp lemon zest

Instructions
 

  • Cream together brown sugar, oil, sour cream, and eggs in a small mixing bowl.
  • In a large mixing bowl, sift in flour, then add baking powder, baking soda, and salt.
  • Stir together and add in cornmeal.
  • Now pour the creamed mixture into a large bowl and stir until just combined.
  • Then add lemon juice and lemon zest and stir again.
  • Pour mixture into a greased 9 x 11-inch baking dish and bake at 400 degrees for 25 minutes.
