Has this every happened to you? You find a new recipe for a decedent cake or cupcake, but tragedy strikes and the cake falls. Recently, I was excited to try a recipe for fudge cupcakes that have raspberry syrup in them for a tangy twist. I believe I followed the recipe to a “T” but this happened.
They puffed up and fell. They weren’t hard; they were tasty, so now what? I thought about piling on extra frosting on top and camouflage the disaster. And then inspiration struck: cake balls!

The baked but fallen cake or cupcakes, raspberry syrup, chocolate and/or vanilla almond bark for dipping, and canned frosting.
Break up all of the cupcakes using your hands in to a mixing bowl.
When making this simple recipe, I used
Good Grips, no slip when mixing. Each bowl has a spout for easy pouring. Dishwasher safe.
Next add 1/3 cup of raspberry syrup.
My cupcake recipe has some raspberry syrup in it. I found the flavor of the cupcakes chocolatey, but only a slight taste of raspberry. The addition of the syrup made for a great raspberry flavor in the finished product.
Now add about half a can of frosting.

Next make the balls. Here you have 2 choices, you can pinch off a walnut size piece of dough or like me, you can use a small cookie scoop like The pros of using a cookie scoop is that your hands won’t get dirty, the cons are your cake balls will have a flat bottom; make your choice.
Since you will be dipping the cake balls in melted chocolate, the next step is to place them in the freezer for about 30 minutes.
At this time, melt the dipping chocolate. There are several ways to do this, you can microwave the chocolate in one minute increments, stirring after each round. You can place the chocolate in a double boiler to melt. Or you can do this method, place the chocolate in canning jars and put them in a pot half filled with water set to boil. I used large mouth lid jars to make the dipping easier.
Dip the cake balls and then place half a raspberry on top. As the chocolate cools and hardens, it will secure the raspberry.
Will I make it again?: Any time my cake doesn’t turnout, I will turn them into Cake Balls! 😋😋😋😋😋
